Frittata, Fast, Filling and Double Duty

Frittata, an Italian quiche if you will, is a fast easy dinner that will double as tomorrow's breakfast. The possibilities are endless, eggs and practically anything you have in the fridge. I bake mine but the proper Italian way is to fry it in olive oil in a frying pan, flip onto a plate, slide it back into the pan and brown the other side, but I have seen many fall on the kitchen floor and I'm chicken shit (lol). I use for my egg base:
8 eggs
1/4 cup heavy cream
1/4 cup grated cheese
2 tablespoons parsely
salt and pepper to taste
Tonight I added:
chopped pepperoni and Mozzarella




 scramble the egg base, add the pepperoni and mozzarella, grease well a baking dish and bake at 350 till set.
*soup or salad a perfect weeknight dinner
**I can't think of any addition that wouldn't be good except fruit 
***leftover pasta of any kind is perfect
